Quality Control / Food Safety

Strict quality control measures begin from the moment a fish is caught in our nets and hauled onto the boat. The fish are packed on ice, and as soon as the boat docks, is rushed to our state-of-the-art HACCP approved and globally certified and third party audited processing facility. The fish are sorted, scaled, filleted, and graded prior to flash freezing. The fish are then glazed packed, labeled for traceabilty and shipped to our customers.

John O Foods operates under the principals of HACCP (Hazard Analysis Critical Control Point) and all relevant GMP’s (Good Manufacturing Practices). In addition to strict Canadian Food Inspection Agency regulations, John O Foods has its own food quality, food safety and product specification standards in place.
